Gardens

This is the first year that I have had a garden. And I have Dad T to thank for it. We have burpless cucumbers (yes cucumbers make you burp UNLESS you get the burpless kind), three kinds of tomatoes, yellow crooked neck squash and early butternut. It was been FANTASTIC to have these veggies fresh and on hand AND I don't have to buy them at the store. Next year I have plans for much more in my garden and can hardly wait for winter to be over already, too bad it hasn't even started.

While I don't have any pictures on hand of MY garden, I loved this picture of my sister Abbie with zucchini from her garden.


Cucumber Salad (Picture to post later)

Cucumber's, thinly sliced
1 small white onion, chopped small
1 cup white vinegar
1/2 cup water
3/4 cup sugar
1 tablespoon dried dill (or to taste)

Toss the cucumbers and onion in bowl. Combine the vinegar, water and sugar in saucepan over med-high head. Bring to a boil and pour over cucumber and onions. Stir in dill, cover and refrigerate till cold. Allow to marinate for at least one hour.
(I don't always have dill on hand, and it still tastes great without it. Also I didn't have an onion once, and it was great as well. Just make sure you have the cucumbers and vinegar mixture and you're good.)
